Breakfast for my Valentine

So, i decided to try to make a Frittata for breakfast this morning for my love for Valentine's Day. This kind of thing is totally what he loves but, as much as i love cooking, i'm a little scared of cooking breakfast. I don't know why. I just feel more confident with dinner. Anyway, it's Valentine's Day so i wanted to make something yummy & this is totally the kind of thing he'd love. So i did it. And - it was a HIT! He loved it - he kept saying "OH MY GOSH. Oh my GOSH!" HAHA. And, i loved it too. Which i wasn't really sure if i would. I would have gotten seconds if i hadn't been so FULL!

So you should try this. It doesn't take long & it is FANTASTIC.

Also, the good thing about it is you don't have to put in it exactly what i did. f you don't like black olives, leave them out. If you want to add celery or something, do it! This one has celery & spinach leaves, which were not in the original recipe.

Mediterranean Frittata
This recipe came from my Better Homes & Gardens New Cookbook.

1 cup chopped onion
2 cloves garlic, minced
3 Tablespoons extra virgin olive oil
8 eggs
1/4 cup skim milk
1/2 cup crumbled feta cheese (2 ounces)
1/2 cup chopped bottled roasted red sweet peppers
1/2 cup sliced ripe olives
1/4 cup slivered fresh basil
1/8 teaspoon black pepper
1/2 cup croutons, coarsely crushed
3 Tablespoons finely shredded Parmesan cheese
1/3 cup chopped celery
handful of spinach leaves, chopped

Preheat broiler. In a large broiler proof skillet (cast iron is what i used) cook onion & garlic in 2 T. of the hot oil until onion is just tender. 


Meanwhile, in a bowl beat together eggs & milk. 


Stir in feta cheese, roasted sweet pepper, olives, basil, black pepper (& any other veggie you decide to throw in - I had spinach leaves & celery). 


 {note: i do not mind chopping veggies...but this little gadget makes it go by so much FASTER!}

Pour egg mixture over onion mixture in skillet. 

 
Cook over medium heat. As mixture sets, run a spatula around the edge of the skillet, lifting egg mixture so uncooked portion flows underneath. Continue cooking & lifting edges until egg mixture is almost set (surface will be moist). Reduce heat as necessary to prevent overcooking. 


3. In a small bowl, combine the remaining 1 T oil, the crushed croutons  & Parmesan cheese; sprinkle mixture over frittata. 



Broil 4-5 inches from heat for 1-2 minutes or until top is set & crumbs are golden. Cut frittata in quarters to serve. If desired, garnish with fresh basil leaves.
